Complications When Searching for a New Knife

I was in for a frustrating time when I had to get a new knife. I’d used the old one for many years until the blade broke off its handle. I didn’t know there was so much variety for what were considered the best cooking knives until I got to the store! I spent the whole afternoon testing handle grips, weight and balance, determining the difference it made to have a blade made of hard steel or stainless steel. I haven’t even mentioned how the curve of the blade can influence a cook’s chopping or slicing motions! I guess I can always use a food processor though.
